Best not to visit on a hot day, they do have a refrigerated case, but I'm certain some of it gets kind of rank by the end of the day. This is DD Collins, he bought two spaces in the O Street Market, a market built in 1881. And this is what you would typically find in a butcher of this era, meat arranged on a table in piles, sawdust on the floor to soak up blood, and a number of fans to help disperse the smell.
