They say a cupcake is just a small version of a cake, designed to serve but one purpose. In reality, cupcakes, and the making of cupcakes can do so much more. They are at once a fun activity, a process to turn to for respite and a tasty treat. The chemistry involved in the transformation of simple ingredients into one of life’s pleasures is astounding to witness. Amelia Simmions is credited with the first reference to cupcakes in the book American Cookery in 1796. Since then, the concept has remained more or less the same but the end result has become so varied and so attuned to personal taste, that cupcakes have become a phenomenon all their own with TV shows, cookbooks and even restaurants centred on them. The origins of cupcakes also calls back to the day when they were made by simply measuring “cups” of the ingredients: 1 cup butter + 2 cups sugar + 3 cups flour + 4 eggs (the last you could put in a “cup” just to keep the rule going). These also became known as “quarter cakes” and “1234 cakes.” They provided an alternative to “pound” cakes where the ingredients were measured by the pound. Cupcakes have something for everybody. My granddaughter has been making cupcakes since she was three. And this philosophy always seems to be the answer to really tough days. What better way to keep the happy cupcake thoughts in your mind than with the reminder – “When the going gets tough, the tough make cupcakes?”
